Capillarity ( capillary action ) the rise or fall of liquids in narrow tubes as a result of the surface tension of the liquid, which causes the water to adhere to solid surfaces, such as soil particles or the walls of xylem vessels

When water in the soil or in the xylem is put under tension, due to the evaporation of water from a particular site ( which creates a water potential gradient in the direction of the evaporation ), capillarity enables water to overcome the cohesive forces within the water and move against gravity in response to the water potential gradient
