對于殼聚糖（ chitosan ） ，通過afm直接對殼聚糖進行分子結構水平的觀察研究，發現在濃度低於0 . 1mg ml的稀溶液中用afm可以清楚觀察到糖鏈間形成的環狀或螺旋結構，以及鏈內側枝繞合排列的樹枝狀結構，這種現象是由於糖鏈間和糖鏈內的氫鍵締合所致。
